Hotel Style Sambar / ஹோட்டல் சாம்பார்

Recipe:

Ingredients:

For Tuvar dhal :
 Tuvar dhal - 1/2 cup
Small onions - 6
Green chilli - 1
Cumin - 1/4 tsp
Turmeric powder - 1/4 tsp
Asafoetida - a small fried piece/ or 1/4 tsp to be added while tempering.
Ghee - 1 tsp
Coriander stems - 1 tblsp
Required water.

Pressure cook everything for 4 to 5 whistles until dhal is well cooked and soft. ( Add 2 tomatoes if not adding mango)

For the Sambar:

Heat Oil - 1 tsp, add
Mustard - 1/4 tsp
Cumin - 1/4 tsp
Fenugreek - a pinch
Red chilli - 1
Curry leaves - a few
Onion - 1/2
Mixed vegetables as desired - 3 cups
Sambar powder - 2 tblsp(adjust to spice preference)

Saute well till raw flavour of masala goes away.
Add 2 cups of tamarind extract (from a lemon sized tamarind and 2 cups Water soaked for 30 min).
Let it boil and the vegetables get cooked well.

Add the boiled Tuvar dhal mix.  Bring it to a boil and switch off.

Add curry leaves, coriander leaves, 1/2 tsp jaggery, 1 tsp roasted cumin powder, 1/2 tsp Coriander powder, 1 tblsp coconut oil and 1 tblsp dessicated coconut. Mix well.

Hotel Style flavourful sambar is ready to serve. Goes well with rice and Tiffin varieties like idly, dosa.
