There are so many festivals in our tradition. No other country has so many festivals like us. The next one coming up is Rathasapthami on 19th February 2020. It is celebrated on the 7th day from New moon on the tamil month of Thai(Magaram). It marks the beginning of Utharayanam, the day time of the Devas. This is when the direction of sun is said to change towards the northern hemisphere. It also marks the beginning of spring and summer. It is said that the Sun travels in a chariot with one wheel and is mounted on 7 horses.(the wheel represents the single white colour of light and the 7 horses represent the 7 colours of light). If you notice keenly you'll observe that the festivals coincide with the change in seasons. The prasadham that is made as offering to God are all designed to prepare our mind and body for the forthcoming change in season. Saravana Bhavan Style White Kurma in Tamil| Ingredients and method: To soak for 30 min. And grind : Poppy seeds - 1 tsp Cashew  - 4 Melon seeds - 1 tsp Hot Milk or hot water  - as required * Soak everything in hot milk or water for half an hour. Grind to a smooth paste. For kuruma Oil  - 1 tblsp Ghee - 1 tblsp * Heat oil and ghee together in a cooker. Once hot add the following: Fennel seeds - 1/4 tsp Cinnamon - 1 inch piece Cloves - 4 Stone flower - a small piece Bay leaf - 1/2 leaf Cardomom - 1 * Saute well. Now add Finely chopped onion - 1 Slit green chillies - 2 Ginger garlic paste- 1 tblsp (* this kuruma Can be done even without ginger, garlic and onion) Saute well till the raw flavour goes off. Add  Finely chopped beans, carrots, potatoes, cauliflower - 1/4 cup each. Knol knol, chow chow, soaked Channa or any lentil can be added. Saute well till the colour of vegetables darken. Add required salt and mix well. Add 1.5 to 2 cups of water used

It is given as a seer bakshanam along with the bride when she leaves to her in-laws place after marriage. Properly prepared adhirasam has a very good shelf life and doesn't need refrigeration at all. Made with raw rice, jaggery and ghee it is a wonderful travel food. It is rice in iron and is a healthy sweet. No sweet preparation  is complete without adhirasam in tamilian homes for Diwali or marriage. Adhirasam is like cake in preparation. If the quantity is correct and the method is followed properly you 'll get good adhirasam. Otherwise it tends to seperate in oil. Recipe: Ingredients: For Tuvar dhal :  Tuvar dhal - 1/2 cup Small onions - 6 Green chilli - 1 Cumin - 1/4 tsp Turmeric powder - 1/4 tsp Asafoetida - a small fried piece/ or 1/4 tsp to be added while tempering. Ghee - 1 tsp Coriander stems - 1 tblsp Required water. Pressure cook everything for 4 to 5 whistles until dhal is well cooked and soft. ( Add 2 tomatoes if not adding mango) For the Sambar: Heat Oil - 1 tsp, add Mustard - 1/4 tsp Cumin - 1/4 tsp Fenugreek - a pinch Red chilli - 1 Curry leaves - a few Onion - 1/2 Mixed vegetables as desired - 3 cups Sambar powder - 2 tblsp(adjust to spice preference) Saute well till raw flavour of masala goes away. Add 2 cups of tamarind extract (from a lemon sized tamarind and 2 cups Water soaked for 30 min). Let it boil and the vegetables get cooked well. Add the boiled Tuvar dhal mix.  Bring it to a boil and switch off.

https://youtu.be/im1rO5RMkTw Thean Mittai is a traditional sweet. It has a crispy outer covering and a sweet juicy inner part. It is very simple and easy to make. Ingredients : Idly rice - 1 cup Urad dhal - 3/4th of a 1/4 cup Sago / Maavu Javvarisi- 1 tblsp Salt a pinch. Wash and soak idly rice, Urad dhal and sago for 4 hours. Grind into a thick batter by adding only 1/2 cup of water and a pinch of salt. To the batter add: Baking soda - 1/8 tsp Orange colour + red colour - 1/8 tsp Sugar syrup: Sugar - 300 gms or 1.5 cups Water - 3/4 cup Heat water and sugar for 5 min. Let the consistencyof syrup be a little before one string. Heat oil. Wet your fingers and pinch a small piece of batter and drop it in oil. Keep the oil in medium low heat. Fry all sides till crisp and add it to sugar syrup. Let it soak for 15 min. Collect the then mittai and spread it on a plate to dry. Alternatively you can roll them in a mixture of powdered sugar and crystal sugar and store

Ingredients: For the batter: Corn flour - 1/2 cup Water - 1/2 cup Colour - a pinch Salt - a pinch. Mix everything together well. Keep it aside. For the sugar syrup: Sugar - 1 cup Water- 13/4 cup. Milk - 1 tblsp ( to remove impurities) Add sugar and water. Bring it to a boil and cook it to one string consistency. Add a tblsp of milk to remove the impurities in sugar if necessary. For the halwa: Ghee - 1/4 cup + 1/4 cup( optional) Cucumber seeds- 1/4 tsp Method: To the sugar syrup (with one string consistency ) Add the prepared corn flour batter and cook till it thickens well. Add ghee little by little. The batter will absorb the oil completely. Keep stirring till it becomes ball like and doesn't stick to the sides of the vessel. Add the cucumber seeds.
